Apple Pie Popsicles using Fresh or Home Canned Apples

My fondest memory as a child revolves around popsicles. Well, not really popsicles, but ice-pop. Ice-pop made of Kool-Aid frozen in Dixie cups to be exact.
My mother sold these ice-pop for $10 a cup to the neighborhood children. In fact, she made a killing selling them. Raising enough money to pay for my father to take college courses.
The love I have for homemade popsicles is a fond childhood memory. The recipes I use are a far cry different than Kool-Aid flavored ice-pops, but my family has come to love and expect this homemade treat.
Much like my mother I have created my own popsicle related memories with my family. Hopefully they will remember how much they enjoyed these healthy, sweet treats.
Homemade Popsicles
Because I strive to eat in season as much as possible, making popsicles based on fruits which are in season, or home canned, is the goal. Take for example the cherry and peach popsicle recipes below.
These popsicle recipes were created using fresh in season ingredients. However, because we preserved these fruits through canning we will be able to enjoy these flavors throughout the year.
From pantry to table, this is how we eat.
Apple Pie Popsicles
This recipe calls for the use of fresh apples. However, home canned apple slices can be used in exchange for fresh apples. This recipe makes 8 2ounce popsicles, feel free to double the amount for larger molds.
Ingredients
- 1 large apple, or 1 pint size jar home canned apples
- 7 tablespoons maple syrup, reserve 3
- 2 tablespoons almond butter
- 2 tablespoons water
- 1/2 teaspoon ground cinnamon
- 1 cup plain Greek yogurt
- 1/2 teaspoon vanilla extract
Equipment
- silicone popsicle mold
- small stainless steel sauce pan
- mixing bowl
- silicone spatula
Instructions
- Wash, peel, and core apples. Next, finely chop the apple slices to small bite size pieces. If using home canned apples, strain the liquid from the apples, chop apples into small bite size pieces.
- In the small saucepan add the apples, 4 tablespoons of the maple syrup, almond butter, water, and cinnamon. Cook the ingredients over medium heat for roughly 10 minutes, making sure to stir to prevent scorching.
- Remove the saucepan from the heat once the apples have softened to a chunky applesauce consistency. Set aside until the apple mixture has cooled to room temperature.
- In the mixing bowl add the remaining maple syrup, Greek yogurt, and vanilla. Mix the ingredients until they are fully blended.
Filling the Mold
- Begin by adding a small amount of the Greek yogurt mixture to the popsicle molds.
- Next, add a small amount of the apple mixture. Continue the layers making sure to alternate between the yogurt and the apple mixture.
- Once the molds are filled, gently tap the popsicle mold onto the counter to remove any air pockets.
- Insert the stick and place into the freezer until yogurt is hard. This will take roughly 4 hours.
Note
This simple apple pie popsicle recipe can be made into an adult version. Add 5 tablespoons, more or less, of bourbon the apple mixture.
