Popsicles have come a long way since my youth. Or maybe I now seek a more sophisticated taste in food items as simple as popsicles. How is it possible that something as simple as popsicles can be sophisticated?
Popsicles hold a dear place in my heart. Would you believe it if I told you popsicles paid for my father to attend college? Yep, it’s true.
When we were stationed in Panama my mother made Kool-aid flavored popsicles in Dixie cups, selling them for 10 cents a cup. The kids in the neighborhood went crazy over them, and more times than not would return multiple times throughout the day.
I’ve come a bit further than making Kool-aid flavored popsicles in Dixie cups, however, I will never forget the joy and memories of my mother and our freezer filled with Dixie cup popsicles.

Roasted Peaches and Cream Popsicle Recipe
This by far is my most favorite homemade popsicle recipe. Is there a better pairing than peaches and cream? Well, only if bourbon is added to the mixture, making bourbon peaches and cream popsicles for the adults of the house.
Ingredients
The nice thing about this recipe is that it can be modified according to how your family will enjoy it. For a sweeter cream increase the amount of honey and vanilla extract called for.
- 1 1/2 cups ripe peaches
- 8 tablespoons honey, divided
- pinch of salt
- 1 cup plain Greek yogurt
- 1 teaspoon vanilla extract
Equipment
This recipe yields 8 (2 ounce) popsicles, double the ingredients if your mold is larger than what is suggested.
- silicone popsicle mold
- small silicone spatula
- glass mixing bowl
- measuring cup
- measuring spoon
Instructions
The peaches can be roasted in advance, simply store in the refrigerator until ready to use.
Roasted Peaches
- Preheat oven to 375 degrees Fahrenheit
- Wash and slice peaches into 1/2 inch wedges
- On a baking sheet lay down parchment paper, add the peach slices, salt, half of the honey and mix well.
- Bake the peaches for 20 to 25 minutes or until they are tender.
- Remove from the oven and allow to cool to room temperature. As the peaches are cooling prepare the cream.
Cream
As the peaches are cooling begin working on the cream.
- In a mixing bowl add the Greek yogurt, vanilla, and remaining honey. With a silicone spatula, mix well.
Peach Popsicle Recipe
- Begin by adding a spoonful of the homemade cream to the mold.
- Add a slice of roasted peaches or two.
- Continue rotating between the peaches and cream, stopping to tap the mold to release any air pockets within the mixture.
- Freeze the roasted peaches and cream popsicles for a minimum of 4 hours prior to consuming.
