Homemade egg noodles should be dried prior to preparation and preserving. Drying allows the noodles to firm up and less sticky. Air drying also helps to prevent the noodles from clumping together. In addition to this, the noodles will hold their overall shape when prepared.

There are two methods available when drying homemade egg noodles. The first is to create a nest with the sliced noodles. The next, hang sliced noodles on a drying rack. Regardless of the method make sure to dust the noodles lightly with flour to prevent sticking.

Preserving homemade egg noodles

This recipe can be made in advanced and dehydrated or freeze dried to be consumed at a later time. For long term storage, dry noodles in a dehydrator. The Excalibur is amazing tool and my choice for all drying projects. Also, once the egg noodles have dried make sure to store in an airtight container.

    1. For storage they can be frozen. The noodles should be air dried prior to cooking with them to allow them to firm up and be less sticky.

  1. My husband made noodles but they would not cook, no matter how long we left them in the pot. They were not good. I don’t think they were overly thick, rolled out with a rolling pin. What do you think happened? A lot of work for something not usable 🙁

    1. Oh no! Can you describe the texture? And also, how long did you let them dry for prior to cooking them? We generally hang our for a few hours prior to cooking.
