The next question I am often asked, can eggs be frozen if they are purchased from the supermarket. Again, the answer is, yes.

There are multiple methods for preserving eggs. Dehydrating and freezing fresh eggs are the more common methods. However, there are two other methods which are not quite as popular.

Freezing fresh eggs allows for them to be prepared in the following way:

  • baked goods
  • scrambled eggs
  • frittatas

  • omelets
  • pancakes, French toast, and baked French toast (you’ll want to come back for this recipe)

Basically, what I am saying is this, use frozen eggs as an ingredient in a recipe which calls for them. Of course, sunny side up eggs are not an option.

Steps for Freezing Chicken Eggs

The steps for freezing chicken eggs is quite simple, and in truth, there are only two. However, pay close attention to how to store them properly to prevent freezer burn.

Also follow these steps for freezing duck eggs. However, keep in mind that 1 duck egg is equivalent to 2 chicken eggs. Make sure when freezing duck eggs you plan accordingly to how they will be used.

Ingredients

  • farm fresh eggs, or supermarket eggs

Equipment

  • immersion blender, or hand whisk
  • wide  mouth mason jar
  • XL silicone ice-cube tray
  • freezer

Instruction

The decision as to whether to freeze a single or double egg cube is up to you. Keep in mind, many recipes call for two eggs as the ingredient. I would highly suggest that you freeze both, single and double egg cubes. 

  1. Wash eggs well, especially if they are farm fresh eggs.
  2. Crack eggs, either one or two, into the wide mouth mason jar
  3. Using either an immersion blender or hand whisk, mix eggs. Whisk the eggs enough to blend the whites and yolks, do not over whisk eggs as this adds air to them.
  4. Pour the whisked eggs into the XL silicone mold. Using a spoon, remove any air-bubbles which are present.
  5. Place into the freeze until the eggs are fully frozen.
  6. Remove eggs from the silicone mold and prepare them for storage.
  7. Using a vacuum sealer, seal 24 egg cubes and store in the freezer for up to 1 year. Please note, determine the best amount to be vacuum sealed based on how often the eggs will be used.

To Use

  1. Pull as many egg cubes needed for cooking. Place them into an appropriate size mason jar (or ziploc bag) and thaw in the refrigerator. Quick thawing is achieved by placing the mason jar (or ziploc bag) in room temperature water until they have completely thawed.
