Homemade Pumpkin Bars using Home Canned Pumpkin

There must be hundreds of recipes for making homemade pumpkin bars. However, the best recipes are passed between family and friends. These recipes have been passed on so often that noone one remembers where the original recipe came from.

With each recipe passed down it has more than likely been modified, that is what makes a recipe unique and special.

This recipe for pumpkin squares was shared with me many, many years ago from a friend. And as recipes go, I have since modified it to fit my homestead and how my family will enjoy it.

The best part about this recipe? It can easily be made into biscotti! Yes, a delicious pumpkin biscotti. It really doesn’t get better than this.

As a sustainable homesteader canning basic items allows my family to enjoy the harvest in multiple manners. Take for example, canning pumpkins or canning apple slices.

Canning these items in their basic form allows an individual countless methods for how they can be prepared. Especially since sugar pumpkins do not keep well long-term and are only available during the fall months.

Home Canned Pumpkin and Pumpkin Recipes

There’s nothing better than using home canned pumpkins for cooking. The process for canning pumpkin is extremely easy and an excellent, and delicious, way to preserve the pumpkin harvest.

Home canned pumpkin can be used for making soap, as well as for making a delicious and healthy pumpkin spice coffee creamer. In addition to human consumption, home canned pumpkin can be offered to your dogs to help with constipation in addition to slowing down runny stool.

For those who are not taking the time to can pumpkins this year I’d highly advise you do so! The uses for this fall item is quite plentiful.

Homemade Pumpkin Bars

Grab a cup of coffee or tea, this recipe for homemade pumpkin bars is simple and quite delicious. Feel free to serve it with homemade cream cheese frosting or whipped cream. However, don’t be afraid to serve it as is in its simplest form.

Keep in mind, many of the ingredients I use are from items which were preserved. For example, home canned pumpkin. However, many of the ingredients used can be purchased at your local market. 

Ingredients

  • 4 large eggs
  • 1/ 3/4 cup sugar
  • 1 cup home canned applesauce, or 1 cup vegetable oil
  • 2 cups pumpkin puree from home canned pumpkins, or 1 16 ounce can of pumpkin puree
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoon pumpkin pie spice
  • 1 cup golden raisins, optional
  • lard or butter to grease the bottom of the baking pan

Equipment

  • 3×9 baking pan
  • measuring spoons
  • measuring cup, dry
  • mixing bowl
  • hand whisk
  • fine mesh sifter
  • silicone spatula
  • immersion blender

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Strain the water from 2 quart jars of home canned pumpkins. Place the strained pumpkin cubes into a mixing bowl. Using an immersion blender, blend the cubed pumpkins until a pureed texture is achieved and set aside.
  3. In a separate mixing bowl hand whisk the eggs until they are frothy.
  4. Add sugar and continue to mix for 2 minutes, or until the sugar is fully mixed with the eggs.
  5. Gently whisk in the applesauce (or vegetable oil) and pumpkin puree, continue to whisk until all ingredients are thoroughly blended.
  6. Add the golden raisins to the mixture or omit from the recipe.
  7. Sift all dry ingredients into the pumpkin mixture. Mix the dry ingredients and pumpkin puree well taking care to not over mix.
  8. Lightly grease the bottom and sides of the 3×9 pan. Next, lightly sift flour into the pan applying an even coating.
  9. Bake for 35 to 40 minutes or until done. To check doneness by inserting a toothpick, once it withdrawals clean the homemade pumpkin bars are done cooking.

Notes: This traditional recipe is much denser in texture than other recipes. Add homemade cream cheese or homemade whipped cream as a topping. Extra pumpkin squares can be dehydrated to make pumpkin biscotti.
